Ingredients

  • Salsa
  • 1 lb stone fruit (peaches, nectarines, plums, cherries, mango)
  • 1 small jalapeño, seeded and small diced
  • 2-3 Tbsp cilantro minced
  • ¼ cup red onion, minced
  • 1 lime, juiced
  • 1-2 tsp honey
  • ¼ tsp black pepper
  • ¼ tsp sea salt

Instructions

  1. Pit the fruit and cut into small diced pieces. 
  2. In a bowl, toss together fruit, jalapeño, red onion, and cilantro.  Squeeze the lime juice over the mixture and add honey, black pepper, and sea salt. Stir until combined. 
  3. Refrigerate until ready to serve with grilled salmon tacos alongside cabbage slaw and chipotle aioli.
